This Almazan Kitchen Chef knife is Hand Forged from Hardened High Carbon Blade Steel and honed to a Razor-Sharp edge. A special feature of the blade is its hardness of 58-60 HRC. It is forged and ground by hand and heat treated using traditional Master Smithing techniques. The handle is crafted with Pakkawood. Pakkawood is a stabilized wood that is compressed under high pressure to create a very dense and durable material while still exhibiting its natural beauty. Versatile, Durable, and built to Resist, each knife is hand made to last and can stand up to whatever you throw at it. We have had customers do the unthinkable.. and yet the knife has still performed. Please note: This is a hand-forged carbon steel knife. If you have not owned a carbon steel knife in the past you need to be aware that these knives as for the steel have certain characteristics and have an adjustment period where the knife blade will go through changes to form a patina. Also, there is a certain cleaning and storage routine for such knives. When you receive this knife it will be covered in a light oil coating, This will need to be washed off with dish soap and water before first use. After each use just rinse and dry completely, then for storage use any cooking oil and put a coat to keep the blade protected. It is newly forged so it will still rust lightly, just clean and wash with a scrub pad and after the initial rusting “sweating” of the steel, it will stabilize.
